6 Oakdell Cage Free Eggs, hard boiled and peeled
1 tbsp olive oil
2 tsp minced garlic
1 (10 oz) bag baby spinach
1 cup ricotta
2 tbsp butter
2 tbsp all-purpose flour
2 cups half and half
1 tsp garlic powder
1/4 tsp nutmeg
1 cup parmesan cheese
Salt and pepper, to taste

Au Gratin Eggs Directions

  1. In a large skillet, heat olive oil over medium-high heat. Add garlic and cook for 1 minute. Add spinach and cook until wilted, about 3 minutes. Stir in ricotta and season with salt and pepper to taste. Place in an 8x8" baking dish sprayed with non-stick cooking spray.
  2. In a large skillet, heat butter over medium-high heat until melted. Whisk in flour and cook for 1 minute. Whisk in half and half, garlic powder, and nutmeg. Cook until thickened, about 2 minutes. Stir in half of the cheese and salt and pepper to taste.
  3. Place hard boiled eggs on top of spinach mixture. Pour cheese mixture over the top of eggs and sprinkle the remaining cheese on top. Set the oven to broil and broil until the cheese is melted, about 1-2 minutes. Watch it closely so it doesn’t burn.
