6 Oakdell Cage Free Eggs |
2 tbsp olive oil |
6 white corn tortillas |
salt and pepper to taste |
1 cup refried beans |
1 lime juice wedge (plus more for serving) |
1/2 tsp fajita seasoning |
1 cup tri-color coleslaw mix |
1/3 cup cilantro chopped |
1/3 cup salsa |
Breakfast Street Tacos Directions
- Add oil to a large skillet and heat over medium-high heat. Cook tortillas for 60-90 seconds on each side, or until lightly browned. Set aside.
- Add eggs to skillet and cook over medium-high heat until egg whites set, about 3 minutes. Flip over and cook until the yolks are set, about 2 minutes. Add salt and pepper to taste.
- In a small microwave safe bowl, warm up refried beans in the microwave for 30 seconds at a time; stir in between. Stir in lime juice and fajita seasoning. Spread over tortillas.
- Place egg, coleslaw, cilantro, and salsa on top of beans. Fold tortilla in half to make a taco and serve with lime wedges.
