Ingredients

Salad

4 Oakdell Omega-3 Brown Eggs, hard boiled, peeled, and sliced
1 1/2 lbs fresh brussel sprouts, shredded
2 cups apple chips
1 tsp lemon juice
1/3 cup pomegranate seeds
1/2 cup glazed pecans, chopped
2 oz feta cheese
2 chicken breasts or rotisserie chicken, cooked and sliced

Vinaigrette Dressing

1/3 cup extra virgin olive oil
3 tbsp apple cider vinegar
1 tbsp fresh lemon juice
2 tbsp honey
1 1/2 tsp dijon mustard
1/2 tsp sea salt
1/4 tsp pepper

Brussel Sprout and Egg Salad Directions

  1. Toss all the salad ingredients together in a large bowl. Top with chicken.
  2. Place the vinaigrette ingredients in a mason jar. Close lid tightly and shake the jar until well mixed. Drizzle over salad and toss well to coat. Let sit for at least an hour to let the flavors develop.
