3 1/2 cups all-purpose flour |
2 tsp cornstarch |
3/4 tsp salt |
1 tbsp baking powder |
1 tsp baking soda |
1/2 cup salted butter |
1/2 cup granulated sugar |
1 1/2 cups packed brown sugar |
1 cup shredded zucchini |
1 tbsp pure vanilla extract |
2 cups chocolate chips |
Cakey Zucchini Chocolate Chip Cookies Directions
- Preheat oven to 375 degrees F. Spray cookiesheet with non-stick spray.
- In a large bowl whisk together flour, cornstarch, salt, baking powder, and baking soda.
- In a stand mixer fitted with the paddle attachment, mix butter, sugars, and zucchini until fluffy. Mix in egg, yolks, and vanilla.
- Slowly mix in the dry ingredients into the batter until well incorporated. Stir in chocolate chips.
- Scoop cookies onto prepared cookie sheet and bake for 12-15 minutes or until edges are golden brown. For gooey middles slightly underbake and for cakey cookies cook until lightly browned.
