Cakey Zucchini Chocolate Chip Cookies

1 Oakdell Omega-3 Brown Egg
2 Oakdell Omega-3 Brown Egg Yolks
3 1/2 cups all-purpose flour
2 tsp cornstarch
3/4 tsp salt
1 tbsp baking powder
1 tsp baking soda
1/2 cup salted butter
1/2 cup granulated sugar
1 1/2 cups packed brown sugar
1 cup shredded zucchini
1 tbsp pure vanilla extract
2 cups chocolate chips

Cakey Zucchini Chocolate Chip Cookies Directions

  1. Preheat oven to 375 degrees F. Spray cookiesheet with non-stick spray.
  2. In a large bowl whisk together flour, cornstarch, salt, baking powder, and baking soda.
  3. In a stand mixer fitted with the paddle attachment, mix butter, sugars, and zucchini until fluffy. Mix in egg, yolks, and vanilla.
  4. Slowly mix in the dry ingredients into the batter until well incorporated. Stir in chocolate chips.
  5. Scoop cookies onto prepared cookie sheet and bake for 12-15 minutes or until edges are golden brown. For gooey middles slightly underbake and for cakey cookies cook until lightly browned.
