1/4 cup butter |
1/4 cup brown sugar |
2 tsp ground cinnamon, divided |
2 tsp vanilla extract, divided |
1 large granny smith apple, peeled, cored, diced |
3 large ripe bananas, divided |
2/3 cup vegetable shortening |
3/4 cup granulated sugar |
2 1/4 cups all-purpose flour |
1/2 tsp salt |
2 tsp baking powder |
Caramelized Apple Banana Brownies Directions
- Preheat oven to 375 degrees. In a large skillet over medium-high heat melt butter and brown sugar. Stir in 1 teaspoon cinnamon, 1 teaspoon vanilla, diced apple, and 1 banana sliced. Saute until the apples are slightly softened, about 5 minutes. Remove from heat.
- In a large bowl, beat together shortening and sugar until well incorporated. Mix in 1 teaspoon vanilla, egg, apple mixture, and remaining bananas.
- In another bowl whisk together flour, salt, baking powder, and remaining 1 teaspoon of cinnamon. Mix the flour mixture into the wet ingredients.
- Pour into a greased 9x11 baking pan. Bake for 18-20 minutes or until slightly tan. Optional: top with more cinnamon. Serve with ice cream and caramel sauce if desired.
