Cloudy with a Chance of Avocado Toast

4 separated Oakdell Omega-3 Brown Eggs |
1 avocado |
2 slices of bread |
1 tbsp lemon juice |
salt and pepper to taste |
Cloudy with a Chance of Avocado Toast Directions
- Preheat your oven to 400 degrees. Line a baking pan with a Silpat and set aside.
- Whip the egg whites with the lemon juice to stiff peaks and add enough salt and pepper to taste.
- Build two “clouds” of egg whites on the Silpat with a small indentation on the top for the egg yolks. Place in the pre-heated oven and bake for 10 minutes.
- Remove the clouds from the oven and gently place the egg yolks in the indentations on top and place back in the oven for another 10 minutes.
- While the “clouds” are baking, toast the bread and divide the avocado flesh between the two pieces of toast.
- Remove the “clouds” from the oven and using a spatula, transfer the “clouds” and place on the avocado toast. Serve and enjoy!
