1 Oakdell Cage Free Egg |
2 Oakdell Cage Free Egg yolks |
3 lbs yukon gold potatoes, peeled and cut into cubes |
3 tsp salt, divided |
1 tsp pepper |
6 tbsp unsalted butter, melted |
1/3 cup heavy cream |
2 oz cream cheese, softened |
1/4 tsp nutmeg |
Chives, chopped |
Duchess Potato Casserole Directions
- Preheat oven to 450 degrees. Add 2 teaspoons salt and potatoes to a large pot of water and boil until the potatoes are tender and can be easily pierced with a fork. Drain water and press the potatoes through a ricer or a strainer into a medium bowl.
- Mix in 1 teaspoon salt, pepper, melted butter, heavy cream, cream cheese, egg, egg yolks. and nutmeg.
- Add 2/3 of the potatoes to the bottom of a casserole pan. Place the remaining potatoes into a piping bag fitted with a large star tip. Pipe the remaining potatoes on top. Bake for 25 minutes. Top with chives.
