Be creative when making your egg boats. Use cheese, bacon, or any other flavors you like to combine together. Our egg boats are baked in baked potatoes, avocados, and bell peppers. A great breakfast or brunch idea!

1 bell pepper |
1 avocado |
1 baked potato |
1 cup shredded cheese |
6 Oakdell Omega-3 Brown Eggs |
Salsa
1 cup diced bell pepper |
1/2 onion, small sized, chopped |
1/4 cup fresh chives, chopped |
1 tomato, diced |
Egg Boats Directions
- Preheat your oven to 350 degrees.
- Slice the bell peppers, avocados, and baked potato in half lengthwise. Carefully remove the seed packet from the bell peppers and using a spoon, scoop out the center of the avocado and baked potatoes enabling your to crack one or two eggs into the hollowed out center.
- Place the prepared egg boats on a baking sheet and sprinkle with salt/pepper to taste.
- Carefully place in the in the oven and bake for about 15 minutes or until the eggs reach the “doneness” you enjoy.
- While the eggs are cooking, fold all of the salsa ingredients together, salt/pepper to taste and spoon the salsa over the baked egg boats. Serve and enjoy!
