Egg Custard Pie with Praline Topping

3 Oakdell Omega-3 Eggs
1 unbaked deep dish pie shell (9 inch)
1 Oakdell Omega-3 Egg White, beaten
1/2 cup 1% milk
1 cup heavy whipping cream
3/4 cup sugar
1/4 tsp salt
1 tsp vanilla
1 tsp cinnamon

Praline Topping

1 cup brown sugar, lightly packed
1/4 cup butter
1/4 cup heavy whipping cream
1/2 cup pecans

Egg Custard Pie with Praline Topping Directions

  1. Preheat oven to 400 Degrees F. Brush the inside of pie crust with egg white to prevent a soggy crust.
  2. In a small saucepan, scald milk and cream over medium heat until it reaches 180 degrees F. Set in fridge to slightly cool; about 10 minutes.
  3. In a medium bowl, mix together eggs, sugar, salt, and vanilla. Slowly add in a small amount of the milk mixture, whisking constantly to temper the eggs. Continue slowly adding in the rest of the milk mixture while whisking. This will prevent the eggs from scrambling. Pour custard mixture into the pie crust. Sprinkle with cinnamon.
  4. Bake on the lowest rack for 45-50 minutes or until a knife inserted in the center comes out clean. If the crust edges are browning too quickly, cover with foil. Cool completely on rack.
  5. To make the praline sauce, add sugar, butter, and cream to a small sauce pan. Cook over medium heat until the sugar is dissolved; stir constantly.
  6. Top pie with pecans and warm sauce. Serve immediately.
