Category: Main Course

8 Oakdell Cage Free Eggs, hard boiled and peeled
2 tbsp yellow mustard
1/3 cup dill relish
3/4 cup mayonnaise
Sandwich bread
Salt and pepper to taste

Egg Salad Sandwich Directions

  1. Place the hard boiled eggs into a large bowl and using a potato masher, mash the hard boiled eggs.
  2. In a small bowl, mix the yellow mustard, dill relish and mayonnaise together until combine.
  3. Fold the mayonnaise mixture into the mashed eggs, salt and pepper to taste.
  4. Spread the egg salad onto your favorite bread to create your sandwich. I also like to to serve the egg salad on crackers and bagels too. Serve with your favorite sides and enjoy! On air, I served potato salad on the side.
