3 Oakdell Cage-free Eggs |

French Omelet Directions
- Add eggs and salt to a medium bowl. Whisk together with a fork until a cohesive yellow color and no white streaks remain. Let sit for 15 minutes to get fluffier eggs.
- Place cheese on a small plate and melt in the microwave for 40 seconds at 50% power to get cheese to serving temperature.
- Add butter to a small skillet over medium heat. Add eggs and start to scramble eggs immediately with a silicone spatula. Once eggs are about 80% cooked, turn off the heat and pat the eggs together along the bottom of the skillet. Add cheese to the center of the egg perpendicular to the handle of the skillet. Cover with a lid for 60 seconds. Then using your spatula roll one side of egg over the cheese and flip out onto a plate rolling up the remainder of the egg. Top with melted butter and chives.
