Now we've done it! We've taken your favorite cold weather drink, hot cocoa, and turned it into a dessert. Of course, we even included the marshmallows to make them EGG-stra yummy!

Brownies

2 Oakdell Cage Free Eggs
1/2 cup unsalted butter
3/4 cup granulated sugar
3/4 cup all-purpose flour
1/3 cup or 2 packets hot cocoa mix
2 oz semi-sweet chocolate, finely chopped
2 oz unsweetened chocolate, finely chopped
1 tsp vanilla extract
1/2 tsp salt
2 cups mini marshmallows, divided

Frosting

1/2 cup heavy cream
1/2 cup milk chocolate chips
1/2 cup semi-sweet chocolate chips
1/2 tsp vanilla

Hot Cocoa Brownies Directions

  1. Preheat oven to 350 degrees. Line a 9x9 pan with parchment paper longer than the pan by about an inch so the brownies can easily be removed.
  2. In a medium saucepan, cook the butter and sugar over medium heat until the butter is melted. Stir in both chocolates until melted. Take off the heat and whisk in eggs, one at a time.
  3. Mix in flour, vanilla, and salt. Pour into prepared pan and top with 1 cup marshmallows. Bake 30 minutes. Let cool completely.
  4. Make frosting by microwaving heavy cream for 1 minute. Place semi-sweet and milk chocolate chips into the cream and cover with a towel for 3 minutes. Then stir until all the chocolate is melted. Stir in vanilla. Let cool about 10 minutes and spread over the brownies. Top with remaining marshmallows. Place in the fridge to let the frosting set up before cutting into squares.
