Nutritious Zoodles Carbonara

Zucchini noodles, or zoodles, make a great healthy alternative to traditional pasta.

1 Oakdell Omega-3 Brown Egg, whole
1 Oakdell Omega-3 Brown Egg, yolk only
1/3 cup grated Parmesan cheese (and extra for serving)
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper (optional)
1 teaspoon salt
1 teaspoon extra virgin olive oil
2 medium zucchini, spiralized (or about 3 cups premade zoodles from grocery store)
1/3 cup onion, diced
3/4 cup Canadian bacon
15 cherry tomatoes, whole
2 teaspoons minced garlic

Nutritious Zoodles Carbonara Directions

  1. Lay the spiralized zucchini between paper towels to absorb excess water. (If you are using pre-made zoodles from the grocery store, this step can be omitted.)
  2. In a large non-stick pan, add olive oil to pan and cook onion over medium heat until soft, about 2 to 3 minutes. Add canadian bacon and cook for another 2 minutes or until warm. Next add tomatoes and garlic and cook for an additional minute. Toss in zoodles and continue cooking until tomatoes start to blister and zoodles are warm, about 3-4 minutes.
  3. While zoodles are cooking, whisk together Oakdell whole egg, yolk, pepper, 1/3 cup parmesan cheese, and cayenne pepper (if desired) in a medium bowl.
  4. Add salt to the zoodles and stir in the egg mixture. Cook for about another minute or until egg mixture is cooked and remove from heat. Serve with extra parmesan cheese, to taste.

Recipe notes

Substitution for spiralized zucchini: use a vegetable peeler to get long zucchini strips, or you can purchase already made zoodles at a grocery store.
