Rainbow Veggies & Eggs

5 Oakdell Omega-3 Brown Eggs
1 red bell pepper, diced
1 sweet potato, diced
1 yellow bell pepper, diced
1 1/2 cups broccoli florets
1 red onion, diced


1/2 cup olive oil
1 tbsp Dijon mustard
1 tbps fresh thyme, chopped
2 tsp apple cider vinegar
3/4 tsp sea salt
1/2 tsp pepper

Rainbow Veggies & Eggs Directions

  1. Preheat oven to 450 degrees F.  Spread veggies in rows by color on a sheet pan sprayed with non-stick spray. Leave room at the bottom of the pan for eggs.
  2. Mix sauce ingredients in a small bowl and drizzle over veggies.  Cook for 30 minutes or until potatoes are almost tender. Add eggs and cook for another 6 minutes.
