| 5 Oakdell Omega-3 Brown Eggs |
| 1 red bell pepper, diced |
| 1 sweet potato, diced |
| 1 yellow bell pepper, diced |
| 1 1/2 cups broccoli florets |
| 1 red onion, diced |
Sauce
| 1/2 cup olive oil |
| 1 tbsp Dijon mustard |
| 1 tbps fresh thyme, chopped |
| 2 tsp apple cider vinegar |
| 3/4 tsp sea salt |
| 1/2 tsp pepper |
Rainbow Veggies & Eggs Directions
- Preheat oven to 450 degrees F. Spread veggies in rows by color on a sheet pan sprayed with non-stick spray. Leave room at the bottom of the pan for eggs.
- Mix sauce ingredients in a small bowl and drizzle over veggies. Cook for 30 minutes or until potatoes are almost tender. Add eggs and cook for another 6 minutes.
