12 Oakdell Omega-3 Brown Eggs
1/4 cup milk
1/2 tsp ground cumin
3/4 tsp salt
1/2 tsp pepper
1 tbsp olive oil
1 small onion, peeled and diced
1 jalapeno, seeded and finely chopped
1 1/2 tsp minced garlic (optional)
1 (15 oz) can black beans
4 cups tortilla chips, roughly crumbled
2/3 cup shredded cheddar cheese, plus extra for serving
Cilantro
Avocado, sliced
Tomato, diced
Ranch dressing

Southwest Migas Directions

  1. In a large bowl, whisk together Oakdell cage-free eggs, milk, cumin, salt, and pepper until well combined. Set aside.
  2. In a large non-stick skillet, heat oil over medium-high heat. Add onion and jalapeño and cook until soft and translucent, about 5 minutes. Add garlic and cook for 1 minute.
  3. Add the egg mixture and reduce heat to medium. Cook for 5-6 minutes, stirring frequently until the eggs are completely scrambled. 
  4. Stir in beans, tortilla chips, salsa, and cheese. Cook for 2 minutes.
  5. Top with cilantro, avocado, tomato, and ranch.
