10 Oakdell cage-free eggs
1 ½ cups heavy cream
2 Tablespoons Italian seasoning, divided
1 cup red bell pepper, diced
1 cup baby spinach, chopped
1 ¼ cups feta cheese
1 cup cherry tomatoes, diced
½ cup olives, chopped
3 Tablespoons extra virgin olive oil

Crustless Mediterranean Quiche Directions

  1. Preheat the oven to 375 degrees. In a medium bowl, whisk together eggs, heavy cream, 1 tablespoon Italian seasoning, red pepper, spinach, and feta cheese. Pour egg mixture into a deep dish pie pan. Bake for 45-50 minutes.
  2. Add tomatoes, olives, 1 tablespoon Italian seasoning, and 3 tablespoons olive oil into a medium bowl. Stir until well coated. Let sit for 20 minutes to marinate.
  3. To serve, slice quiche and top with tomato mixture.
