3 Oakdell egg yolks
3 tbsp sugar
2 1/2 cups heavy cream, divided
pinch salt
2 tsp vanilla, divided
1 (4 oz) baking dark chocolate bar, chopped finely
12 sheets graham crackers broken in halves
5 ounces cream cheese (room temperature)
6 ounces marshmallow fluff

Frozen S'mores Directions

  1. Place yolks and sugar in a medium bowl and mix together with an electric mixer until light and fluffy, about 2 minutes.
  2. In a medium saucepan, warm ½ cup heavy cream and salt over medium-low heat. Don't boil. Slowly pour cream into the yolks while whisking constantly, then pour back into the saucepan and cook over medium heat while whisking constantly until thick, about 3-5 minutes.
  3. Remove from heat and stir in 1 teaspoon vanilla and chocolate. Place in a bowl, cover with plastic wrap and refrigerate until cool.
  4. Meanwhile whip up heavy cream with an electric mixer until stiff peaks. Mix in remaining vanilla.
  5. Place half of the graham crackers in the bottom of a 9x11 pan. Remove the chocolate mixture from the fridge and fold in ½ of the whipped cream. Spread over the graham crackers and place in the fridge.
  6. Mix the remaining whipped cream, cream cheese, and marshmallow fluff together with an electric mixer. Spread over the top of the chocolate mixture and top with the remaining graham crackers. Place in the freezer until firm, about 2 hours. Cut into 12 bars.
