6 Oakdell Omega-3 Brown Eggs, boiled and peeled |
2 lbs red potatoes, cut into 1-inch pieces |
2 cups corn |
2 (4 oz) cans diced green chiles |
4 green onions, chopped |
1/2 cup sour cream |
1/4 cup mayonnaise |
1/2 cup fresh cilantro, chopped, plus some for garnish |
Salt and pepper to taste |
Green Chile Potato Salad Directions
- Put the potatoes in a large pot of salted water and boil until soft. Remove from heat, drain water and transfer potatoes to a large bowl.
- Fold in corn, chiles, green onions, sour cream, mayonnaise, cilantro, salt and pepper.
- Chop Oakdell cage-free eggs and place on top of the salad.
- Sprinkle with salt and pepper and garnish with cilantro.
