6 Oakdell Omega-3 Brown Eggs, boiled and peeled
2 lbs red potatoes, cut into 1-inch pieces
2 cups corn
2 (4 oz) cans diced green chiles
4 green onions, chopped
1/2 cup sour cream
1/4 cup mayonnaise
1/2 cup fresh cilantro, chopped, plus some for garnish
Salt and pepper to taste

Green Chile Potato Salad Directions

  1. Put the potatoes in a large pot of salted water and boil until soft. Remove from heat, drain water and transfer potatoes to a large bowl.
  2. Fold in corn, chiles, green onions, sour cream, mayonnaise, cilantro, salt and pepper.
  3. Chop Oakdell cage-free eggs and place on top of the salad.
  4. Sprinkle with salt and pepper and garnish with cilantro.
