| 2 Oakdell Omega-3 Brown Eggs |
| 6 cups low sodium chicken stock |
| 1 can (14.5 oz) diced tomatoes with garlic and onion |
| 3 tbsp grated parmesan cheese, plus more for serving |
| 2 tbsp fresh basil, minced |
| 2 tbsp fresh Italian parsley, minced |
| 2 cups baby spinach |
| 1 salt and pepper to taste |
Healthy Tomato Egg Drop Soup Directions
- In a large saucepan bring stock and tomatoes with juice to a boil over medium-high heat.
- In a medium bowl, beat eggs, parmesan, basil, and parsley together.
- Reduce heat to low and slowly drizzle egg mixture into stock while swirling with a spoon. Simmer until eggs are set. Add in spinach and cook for 1 minute. Season to taste with salt and pepper. Serve with grated parmesan cheese.
