2 Oakdell Omega-3 Brown Eggs
6 cups low sodium chicken stock
1 can (14.5 oz) diced tomatoes with garlic and onion
3 tbsp grated parmesan cheese, plus more for serving
2 tbsp fresh basil, minced
2 tbsp fresh Italian parsley, minced
2 cups baby spinach
1 salt and pepper to taste

Healthy Tomato Egg Drop Soup Directions

  1. In a large saucepan bring stock and tomatoes with juice to a boil over medium-high heat.
  2. In a medium bowl, beat eggs, parmesan, basil, and parsley together.
  3. Reduce heat to low and slowly drizzle egg mixture into stock while swirling with a spoon. Simmer until eggs are set. Add in spinach and cook for 1 minute. Season to taste with salt and pepper.  Serve with grated parmesan cheese.
