2 Oakdell cage-free eggs
½ cup graham cracker crumbs
1 Tablespoon sugar
2 Tablespoons butter, melted
2 (8 oz.) packages cream cheese, softened
Zest of 1 lemon
½ cup sugar
½ teaspoon vanilla
1 Tablespoon flour
½ cup heavy cream
1 Tablespoon powdered sugar
2 Tablespoons plain Greek yogurt
strawberries, sliced
blueberries

Red White and Blue Cheesecake Bites Directions

  1. Preheat the oven to 325 degrees. Mix together graham cracker crumbs, sugar, and melted butter in a food processor or medium bowl.
  2. Spray a mini cupcake pan with non-stick cooking spray. Add 1 teaspoon of graham cracker mixture into each cup and press into the cup firmly with the back of a teaspoon. Set aside.
  3. In a medium bowl, beat cream cheese, lemon zest, sugar, vanilla, and flour until smooth. Mix in 1 egg at a time until just combined. Place cheesecake mixture in a pastry bag and pipe over the top of graham cracker crumbs filling each cup. Tap pan on the countertop several times to get rid of any air bubbles. Bake for 20-25 minutes. Cool in the fridge.
  4. Remove each cheesecake from the pan.
  5. Beat heavy cream and powdered sugar in a medium bowl until thickened, about 2 minutes. Add yogurt and beat until thick peaks form. Place cream in a pastry bag and pipe on top of each cheesecake.
  6. Top with strawberries and blueberries.
