1 Tablespoon water
salt and pepper, to taste
5 sun-dried tomatoes, julienne cut with herbs
1 Tablespoon feta cheese
1/4 cup diced ham
1 teaspoon fresh parsley, chopped

Sun-dried Tomato and Feta Eggs in a Mug Directions

  1. Place your eggs, water, salt, and pepper in a mug. Whisk together with a fork. Stir in the tomatoes, feta, ham, and parsley.
  2. Microwave on high for 30 seconds, and then stir the mixture. Continue cooking the eggs in the microwave in 30 seconds intervals, stirring in between for a total of 2 minutes or until set.
