| 1 medium onion, diced |
| 1 small red bell pepper, diced |
| 1 small green pepper, diced |
| 2-3 medium size Russet potatoes |
| 12 Oakdell Omega-3 Brown Eggs |
| 1 1/2 cup ham, diced |
| 1/2 cup cream |
| salt and pepper to taste |
| olive oil as needed |
Christmas Frittata Directions
- Preheat your oven to 350 degrees.
- Wash, shred, rinse, and strain/drain the russet potatoes.
- Heat an oven-safe fry pan on the stove and add enough olive oil to lightly coat the bottom of the pan.
- Add the diced onion and bell peppers to the frypan and sauté for a couple of minutes.
- Add the prepared potatoes to the pan and sauté for about 5 minutes.
- In a large bowl, add the Oakdell eggs, diced ham, cream, salt, and pepper and whisk everything together.
- Pour the egg mixture over the potatoes and place the pan in the oven. Bake the eggs for approximately 20 minutes or until cooked through. Serve and enjoy!
