8 Oakdell cage-free eggs
2 Tablespoons butter
1 onion, chopped
1/4 cup sour cream, plus more for topping
1 teaspoon salt
1/2 teaspoon pepper
2 green onions, chopped, plus mre for topping
1 cup mozzarella cheese
1 1/2 cups sour cream and onion kettle popped potato chips, plus more for topping

Potato Chip Frittata Directions

  1. Preheat your oven to 375 degrees Fahrenheit. In a large skillet, melt butter over medium heat. Add the chopped onion and cook for 20 to 25 minutes, or until your onions are caramelized.
  2. In a large bowl, whisk the eggs and sour cream until well combined. Stir in salt, pepper, 2 green onions, and cheese. Pour into a 9-inch pie plate, and spread the caramelized onions and potato chips evenly over the egg mixture.
  3. Bake for 25 to 30 minutes, or until the egg mixture stops jiggling. Let it cool for 5 minutes. Top your frittata with sour cream, green onions, and potato chips.
