| 2 Tablespoons butter |
| 1 onion, chopped |
| 1/4 cup sour cream, plus more for topping |
| 1 teaspoon salt |
| 1/2 teaspoon pepper |
| 2 green onions, chopped, plus mre for topping |
| 1 cup mozzarella cheese |
| 1 1/2 cups sour cream and onion kettle popped potato chips, plus more for topping |
Potato Chip Frittata Directions
- Preheat your oven to 375 degrees Fahrenheit. In a large skillet, melt butter over medium heat. Add the chopped onion and cook for 20 to 25 minutes, or until your onions are caramelized.
- In a large bowl, whisk the eggs and sour cream until well combined. Stir in salt, pepper, 2 green onions, and cheese. Pour into a 9-inch pie plate, and spread the caramelized onions and potato chips evenly over the egg mixture.
- Bake for 25 to 30 minutes, or until the egg mixture stops jiggling. Let it cool for 5 minutes. Top your frittata with sour cream, green onions, and potato chips.
