Strawberry Lemonade Cookies

1 Oakdell Cage Free Egg
2 3/4 cup flour
1/2 tsp salt
1 1/2 tsp baking powder
1/4 cup dehydrated strawberries, crushed to fine powder
1 cup unsalted butter, cut into cubes
1 cup sugar
Zest of 1 lemon
1 tsp fresh lemon juice


1/2 cup powdered sugar
2-4 tbsp fresh lemon juice
1 tbsp unsalted butter (softened)
Zest of 1 lemon for garnish
Garnish with strawberry slices

Strawberry Lemonade Cookies Directions

  1. Preheat oven to 350 degrees F. Spray baking sheet with non-stick cooking spray. Whisk together flour, salt, dehydrated strawberries, and baking powder in a large bowl. Set aside.
  2. Cream together butter and sugar together with mixer until light and fluffy.
  3. Mix in egg, zest, and juice.
  4. Scoop the dough into balls with a cookie scoop and place on baking sheet. Bake for 10-15 minutes. Cool on wire rack.
  5. To make the glaze mix together powdered sugar, lemon juice, and butter. Dip each cookie in glaze and top with lemon zest and strawberry slices.
