1 Oakdell Cage Free Egg |
2 3/4 cup flour |
1/2 tsp salt |
1 1/2 tsp baking powder |
1/4 cup dehydrated strawberries, crushed to fine powder |
1 cup unsalted butter, cut into cubes |
1 cup sugar |
Zest of 1 lemon |
1 tsp fresh lemon juice |
Glaze
1/2 cup powdered sugar |
2-4 tbsp fresh lemon juice |
1 tbsp unsalted butter (softened) |
Zest of 1 lemon for garnish |
Garnish with strawberry slices |
Strawberry Lemonade Cookies Directions
- Preheat oven to 350 degrees F. Spray baking sheet with non-stick cooking spray. Whisk together flour, salt, dehydrated strawberries, and baking powder in a large bowl. Set aside.
- Cream together butter and sugar together with mixer until light and fluffy.
- Mix in egg, zest, and juice.
- Scoop the dough into balls with a cookie scoop and place on baking sheet. Bake for 10-15 minutes. Cool on wire rack.
- To make the glaze mix together powdered sugar, lemon juice, and butter. Dip each cookie in glaze and top with lemon zest and strawberry slices.
