4 hard taco shells |
Toppings of your choice: shredded cheese, diced tomatoes, sliced avocado, chopped cilantro, sour cream, etc. |
Breakfast Taco Egg Scramble Directions
- In a bowl, whisk the Oakdell eggs until well beaten. Season with salt and pepper to taste.
- In a skillet over medium heat, cook the chorizo sausage until browned and fully cooked. Remove from the skillet and set aside.
- In the same skillet, add the beaten Oakdell eggs and cook, stirring occasionally, until they are scrambled and cooked to your desired consistency.
- Warm the hard taco shells according to the package instructions, if desired.
- Fill each taco shell with a portion of the scrambled Oakdell eggs and cooked chorizo.
- Top the tacos with prepared salsa and any additional toppings of your choice, such as shredded cheese, diced tomatoes, sliced avocado, chopped cilantro, sour cream, etc.
- Season the tacos with additional salt and pepper if desired.
