8 Oakdell Cage Free Eggs
1/2 cup cooked chorizo sausage
1 cup prepared salsa
Salt and pepper to taste
4 hard taco shells
Toppings of your choice: shredded cheese, diced tomatoes, sliced avocado, chopped cilantro, sour cream, etc.

Breakfast Taco Egg Scramble Directions

  1. In a bowl, whisk the Oakdell eggs until well beaten. Season with salt and pepper to taste.
  2. In a skillet over medium heat, cook the chorizo sausage until browned and fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, add the beaten Oakdell eggs and cook, stirring occasionally, until they are scrambled and cooked to your desired consistency.
  4. Warm the hard taco shells according to the package instructions, if desired.
  5. Fill each taco shell with a portion of the scrambled Oakdell eggs and cooked chorizo.
  6. Top the tacos with prepared salsa and any additional toppings of your choice, such as shredded cheese, diced tomatoes, sliced avocado, chopped cilantro, sour cream, etc.
  7. Season the tacos with additional salt and pepper if desired.
