zest of 1 lemon

4 slices sourdough artisan bread

Whipped Cottage Cheese Bruschetta Toast with Jammy Eggs Directions

  1. Marinate the tomatoes: In a medium bowl, combine olive oil, garlic, vinegar, onion, and sliced tomatoes with 1 teaspoon salt and ½ teaspoon pepper. Toss gently and refrigerate for at least 10 minutes to allow flavors to meld.
  2. Make the whipped cottage cheese: In a blender or food processor, combine cottage cheese, cream cheese, honey, lemon zest, lemon juice, and the remaining 1 teaspoon salt and ½ teaspoon pepper. Blend until smooth and creamy, about 1 minute.
