Banana Bread
| 2 Oakdell Omega-3 Brown Eggs |
| 1 cup sugar |
| 1/2 cup butter, softened |
| 1 tsp vanilla |
| 4 very ripe bananas, mashed |
| 2 cups all-purpose flour |
| 1 tsp cinnamon |
| 1 tsp baking soda |
| 3/4 cup semi-sweet chocolate chips |
Crumb Topping
| 2/3 cup all-purpose flour |
| 1/3 cup brown sugar, packed |
| 1/3 cup honey roasted peanuts, roughly chopped |
| 4 tbsp butter, softened |
Peanut Crumble Banana Bread Directions
- Preheat oven to 350 degrees F. Spray 9x11 pan with non-stick cooking spray. In a large bowl, cream together sugar, butter, and vanilla with a hand mixer. Mix in eggs and bananas.
- In a medium bowl whisk together flour, cinnamon, baking soda, and salt. Add to the wet ingredients and mix until well incorporated. Stir in chocolate chips.
- To make crumb topping, mix flour, brown sugar, and peanuts in a small bowl. Place dollops of butter into the mixture and press together with your hands creating medium sized crumbs. Sprinkle crumble over the bread and bake for 28-33 minutes or until a toothpick inserted into the center comes out clean.
